If it was not obvious before I come from a very, very Italian family. Our first words were mom, dad, and then probably PASTA. If it were my dad's choice, he would eat Sunday gravy every day of the week. Despite many efforts, a traditional meatloaf was just not going to pass the taste test for my dad, so my mom had to improvise and create an"Italian"meatloaf. One might say but isn't that just a huge meatball?? -- To which my dad would respond - what in the world could be better than that?!

Nothing is worse than strictly following a recipe only to discover that neither looks like the photo nor is tasty! Don't lie we have all been there! My grandmother taught me to cook from the the heart! Recipes are merely a roadmap so if you want to add a little more sauce, cheese, or seasoning be my guest! Do not stress! Be creative and follow your gut. Cooking is supposed to be fun and has always been a great way to bring all my family together (plus nobody can be arguing if their mouth is full of great food).
