Not Your Average Chips & Dip

Chips and guacamole are a classic and deserve a place at the grazing table. But add diced shrimp, some fresh crunchy veggies and lemon juice and yum! This actually can be made in a larger portion as a meal and mimics our version of a classic shrimp salad with a lemon and extra virgin olive oil dressing - perfect on a hot summer night. I did not have enough shrimp to make it a meal and I also had some guacamole left over and said what snack can I make??



This recipe came together so quickly, I was only limited by what I had on hand - a handful of cherry tomatoes, 2 mini Person cucumbers, a yellow bell pepper and some frozen, cooked shrimp, with the tails removed. All ingredients were chopped and drizzled with good extra virgin olive oil, fresh squeezed lemon juice, salt, pepper and garlic powder.


Remove a few scoops of the shrimp salad in a separate bowl and mixed it with guacamole I had left over. Served in my favorite martini glasses, on a board with tortilla chips, it was not only beautiful it was a delicious, refreshing snack! Serve at your next cocktail party and this will be a hit!
