I am not a squash lover, but this recipe completely changed my mind! The spicy sausage really added a pop of flavor and the cheese with the buttery breadcrumb topping was just the essence of comfort food. Make this!

We were very lucky to have friends that gave us homegrown yellow squash that were enormous and a vibrant yellow. Literally these squash, were picked and cooked the next day! The best part about this recipe is that you can use any vegetables you like, such as, zucchini, eggplant or cauliflower - or even a mixture of veggies. This is a great way to use up veggies from the week so they don't go to waste.
