What's for Dinner? Juicy Chicken!

What is for dinner? The very first question of the day from my family. No seriously, my youngest daughter would ask me on the way to school each morning. When I asked her why she needed to know so early, she said because it gave her something to look forward to at the end of each day. She explained, "A great dinner sets me up for a successful day!"



But when the answer was chicken - the follow up was a sad what kind of chicken? Well who could disappoint so I responded with "JUICY CHICKEN! Well the pressure was on and this simple method of cooking chicken did not disappoint.


First, start with skinless, boneless chicken breasts. Typically for a family of four I use 6 large breasts to ensure leftovers for school lunches the next day. This is the easy part ---- select your favorite Italian dressing, or pesto, add salt, pepper and garlic powder. We had some leftover cilantro and chimichurri and added that to my pesto. Let it marinate all day or even overnight if you prefer to plan ahead for your weekday meals.


While I have cooked this in the oven, I find that we like it best cooked on the grill. The trick is to take some foil, pierce some holes in it and spray with non-stick grilling spray. This prevents the chicken from sticking to the foil, allows the the juices to flow through so the chicken browns nicely and does not boil in its own juices which would produce a white unappetizing chicken! The chicken will brown nicely and get the little crispy flavor bits!

Once the chicken is grilled, remove and place on a platter. The trick for juicy chicken, is to cover with foil and let is rest for about 10-15 minutes. After it has rested and all the juices have resorbed into the meat, slice each breast on the biases. Depending on the size of the chicken breasts, each one should produce about 5-6 slices.
