If you are trying to limit your carb intake or trying to just get some more veggies in your diet, zoodles are a wonderful way to add variety. Zoodles are a blank slate and take on any flavor profile you add to them. Typically, zoodles are zucchinis that have been cut into noodle form with a little gadget. You can mix zucchini and yellow squash in this dish since the flavors and textures are similar.
For this quick and easy meal, I used my favorite store bought vodka sauce for a quick and easy weekday meal. Brown about 2 pounds of hot Italian sausage and once brown add two large jars of sauce. My family loves a lot of extra sauce! For the picture below, I used vodka sauce, but marinara or alfredo would work well too. Let simmer, and add fresh basil for a homemade fresh taste.
While sauce is simmering, you can make zoddles with a little zoodle gadget or even buy them pre-made which is readily available in most markets. In a large sauce pan heat and add raw zoodles, salt and pepper. Once the zoodles are cooked to your taste preference, typically n o more than 8-0 minutes, add some sauce to the pan and toss with some grated pecorino romano cheese.
This dish can easily be adjusted to pair with whatever is in your pantry or veggies on hand. These "noodles" go perfect with a white sauce, cheese sauce, marinara- plain or spicy, with veggies or with shrimp or seafood. Options are endless.
